Delicious Stir Fried Curry Udon

I made Singapore Fried Noodles using Udon noodles...wow, it was tasty!

Ingredients

Udon noodles for 2 people
Cooked prawns 14-16
Chicken breast fillet 1
Salt & pepper a little
Bok choy bunch 1
Green beans 10-12
Egg 1
Onion 1/2
Vegetable oil 3 tbsp
Curry powder 2 tbsp
Chicken stock granules 1 tsp
Soy sauce 3.5 tbsp
Oyster sauce 2 tbsp
Red chilli 1

Method

Lightly season the chicken with the salt & pepper, put in a dish and cover with cling film, then microwave for 2 minutes. When cooled slightly, shred by hand. Boil the udon noodles.

I wanted to use beansprouts but there were none available so I used bok choy instead. Slice it finely, along with the onion. Mix the sauce ingredients (chicken stock, oyster sauce, soy sauce and curry powder) together in a bowl.

Put the oil in a large frying pan and heat on high until it smokes, then pour in the beaten egg and scramble it. Add all the chopped vegetables and fry for 1 minute.

Add the shredded chicken from Step 1 and the cooked prawns and stir fry for 1 minute, then add the cooked udon noodles and stir fry it for another minute.

Pour in the sauce from Step 2 and stir fry further.

When you're happy with the taste, add fine slices of the red chilli, mix carefully and serve.
