Creamy Kale Potage

Ingredients

Kale 70g
Potato (small) 1 (125g)
Butter 20g
Water 450ml
Vegetable stock cube 1
Kale (for garnish) a little

Method

Peel the potato and cut into 8. Roughly chop the kale.

Put the butter in a pan and add Step 1 to fry.

When the kale has softened, add the water and stock cube. Turn up to high heat to get to the boil.

Turn down to medium heat and simmer for 7 minutes. Adjust for seasoning with salt.

Pour Step 4 into a blender to make smooth. You can use a hand blender in the pan. Transfer to a serving bowl.

Garnish with kale or sliced cherry tomatoes, whatever you like.
