Crispy Spinach Tempura

You can enjoy this by itself without a sauce and taste the real flavour of spinach.

Ingredients

Spinach 200g
Onion 1
Flour 110g
Salt 3 pinches
Egg 1
Cold water 100ml
Oil for frying as required

Method

Wash the spinach then chop into 2cm length. Slice the onion in quarter then again into 5mm thick. Put both in a bowl.

Add the egg and stir to mix well. Add the flour and salt. Gradually add the cold water until it becomes a thick batter.

Scoop a spoonful of the mix and drop into hot oil 180C and deep fry.

When it's crispy, it's ready to remove from the oil and serve.

Tips & Note

●If you want to serve flavoured salt with this, don't add any to the tempura batter. Flavoured salt can be curry, matcha or chilli salt. There are endless variations.
●When you drop the mix into the oil, do so carefully from the spoon to create neat shapes.
