Peri Peri Cucumber

Ingredients

Cucumber 1
Sesame oil 2 tbsp
Chicken stock powder 1.5 tbsp
Chinese chilli bean paste 1 tsp

Method

Score the cucumber diagonally half way down in 1mm slices. This will get all the flavours deep into the cucumber.

Turn it over and score as above but in the opposite diagonal. Then chop into bite-size pieces.

Put all the ingredients into a bowl and add the cucumber pieces.

Stir it very well. It's ready. Put the cucumber onto a plate then pour over the juices. Sorry it's so quick!

Tips & Note

It's really important to make the scores a thin as possible.
