Courgette and Miso Patties

This uses loads of courgettes but still tastes good.

Ingredients

Courgettes 3
Flour as required
Parmigiano reggiano 2 tbsp
Miso (red) as you like

Method

Grate the courgettes. You'll be surprised how much water it contains. Squeeze out the excess with kitchen paper.

Put Step 1 into a bowl and add the same amount of flour. Add the cheese and knead together for 1-2 minutes.

When it's well mixed, make patties 5cm wide and slide into an oiled frying pan on medium heat.

When nicely browned, turn them over. Cook for 5 minutes in total, they should be ready. Spread a touch of miso on top before serving.

Tips & Note

Courgettes don't have that strong a taste in themselves, so the cheese and miso will help to do this.
You could also add 1 tbsp red miso at Step 2 instead of spreading on top.
