Pan Fried Tuna Piccata

Really delicious when cold so enjoy at a picnic or for a packed lunch.

Ingredients

Tinned tuna (in sunflower oil) 1
Potato (large) 1
Onion (medium) 1/2
Butter 1 tsp
Egg 1
Flour a little
Salt & pepper as required
Ketchup as required
Brown sauce as required

Method

Peel the potato and roughly chop it. Put in a bowl, cover with cling film and microwave for 4-5 minutes until soft, then mash.

Fry the finely chopped onion in butter until translucent.

Add the cooked onions to the bowl at Step 1. Add the lightly drained tuna, mix and season with the salt & pepper.

Make flat oval patties and dredge with the flour. Run through the beaten egg and fry in a frying pan.

When nicely browned on both sides, you can enjoy as it is or with your favourite sauce like ketchup or brown sauce.

Tips & Note

●Everything is already cooked by Step 4, so you just need to get a nice brown colour
