Cauliflower Crostini

Your party guests will love this finger food.

Ingredients

Cauliflower 1/3
Leek 1/4
Garlic 1 clove
Potato 1
Olive oil 1 tsp
Stilton cheese 50g
Chives as required

Method

Pull apart the cauliflower into florets. Roughly chop the leek and thinly slice the potato.

Put the oil and garlic into a pan on a low heat. When you can smell the garlic, add Step 1 and fry for 5 minutes.

Add enough water to Step 2 to just cover the vegetables. Simmer for 20 minutes.

Blend Step 3 when soft until smooth. Add the cheese and allow to melt in with residual heat.

Allow to cool then put spoonfuls onto sliced baguette. Garnish with the chopped chives.

Tips & Note

●In Italian, crostini means little toasts, so lightly toast the bread and top with your favourite ingredients, this is a typical Italian starter.
