Colourful Mediterranean Rice Salad

Perfect dish for a lovely summer's day or a picnic.

Ingredients

Cooked rice 350g
Tomatoes (small) 2
Cucumber 10cm
Carrot (small) 1
Red onion (large) 1
Olives 8
Basil leaves a few
Feta cheese 30-40g
Olive oil 1.5 tbsp
Cider vinegar 1 tbsp
Lemon juice 1 tsp
Salt & pepper a little

Method

Mix all the ingredients from the olive oil to the salt & pepper in a large bowl.

Peel the carrot and grate it coarsely. Add to Step 1 and mix.

Wash the cooked rice lightly and drain well.

Cut the cucumber and tomatoes into 2cm dice. Slice the olives. Finely chop the red onion.

Add the rice to Step 2 and lightly mix. Add the salad vegetables, olives, ripped basil leaves and feta cheese. Mix and serve.

Tips & Note

Make sure to drain the rice well otherwise it will be a bit of a watery salad. When seasoning to taste, bear in mind the olives and feta as they will add some saltiness.
