Courgette & Feta Salad

Adding the sundried tomatoes give colour and flavour to this salad, hot or cold, served with cous cous or a baguette.

Ingredients

Courgette (large) 1
Sundried tomatoes (in oil) 2 large
Feta cheese 50g
Olive oil 1 tbsp
Balsamic vinegar 1 tbsp
Salt & pepper a little
Basil leaves a few

Method

Drain the sundried tomatoes and roughly chop.

Trim the courgette and cut into half lengthways then into 1cm slices.

Put the olive oil in a frying pan and lightly fry the courgette slices on both sides until nicely coloured.

Remove from the pan and season with salt & pepper. Drizzle some olive oil from the pan and balsamic vinegar over the top.

Add the sundried tomatoes and feta cheese, then garnish with the basil.

Tips & Note

Keep the courgette slices fairly thick to enjoy its crunchiness.
You could try using aubergine or peppers as well as courgette.
