Sauteed Chorizo with Asparagus & Sweetcorn

Ingredients

Chorizo 40g
Tinned sweetcorn (small) 1 (130g)
Asparagus 6-8
Cumin powder 1/2 tsp
Salt & pepper a little

Method

Cut the asparagus into half diagonally. Finely slice the chorizo.

Fry the chorizo until crispy in a frying pan (no oil).

Move the chorizo to one side of the pan and add the bottom halves of the asparagus.

Lightly fry then add the top halves of the asparagus.

When they're cooked to your liking, add the drained sweetcorn.

Combine all the ingredients together in the pan and add the cumin powder, salt & pepper before serving.

Tips & Note

Bear in mind the saltiness of the chorizo before you season to taste.
