Cous Cous Salad With Curry Flavour Chicken and Apple

Super simple recipe with just a microwave and one bowl - a nice fruity and spicy combination.

Ingredients

Cous cous 150g
Chicken thighs (skinned) 100g
Apple (small) 1 (180g)
Raisins a handful
Hot water 200-250ml
●Lemon juice 1 tbsp
●Olive oil 1 tbsp
●Curry powder 2-3 tsp
●Salt & pepper a little
Cashew nuts & almonds a handful
Finely chopped mint 1-2 tbsp

Method

Dry roast the nuts (or microwave 40-50 seconds).

Peel the apple and dice into 2.5cm. Cut the chicken into the same size and season with salt & pepper.

in a large bowl, put the cous cous with all the ●ingredients and hot water and mix together well.

Put the chicken, apples and raisins on top and cover with cling film. Microwave (700W) for 5 minutes.

Remove from the microwave and leave aside for 2 minutes with the cling film still on. Remove the cling film and use a fork to mix through gently.

Add the mint and nuts, adjust for seasoning and serve.

Tips & Note

When making the cous cous, follow the packet instructions to use the right amount of water.
