Carrot & Orange Salad in a Honey Mustard

Ingredients

Oranges (Naval), large 1-1.5
Carrot (large) 1
Raisins a handful
Olive oil 1 tbsp
Cider vinegar 1.5 tbsp
Dijon mustard 1 tsp
Honey 1/2 tsp
Salt & pepper a little
Mint leaves (optional) a few

Method

Rehydrate the raisins in hot water, drain then pat dry. Mix together all the ingredients for the dressing (from olive oil to salt & pepper).

Peel the carrot and grate coarsely. Mix with the dressing and add the raisins.

Cut off the top and bottom of the orange then cut off all the peel and pith. Slice thin rounds.

Arrange the orange slices attractively on a plate. Add the carrots in the centre and garnish with mint leaves.

Tips & Note

Make sure to remove all the pith at Step 3 or it will be bitter.
