Ultra Healthy Pearl Barley, Cauliflower & Chickpea Salad

A lovely healthy cumin-flavoured salad suitable for vegetarians and vegans.

Ingredients

Pearl barley (cooked) 200g
Cauliflower (medium) 1/4
Tinned chickpeas 1/2
Carrot 1/3
Walnuts a handful
Olive oil 1 tbsp
Lemon juice 1 tbsp
Cumin powder 2/3 tsp
Salt & pepper a little

Method

Dry roast the walnuts and coarsely grate the carrot.

Boil the cauliflower but keep it crisp. Wash the chickpeas under running water then drain.

Add the dressing ingredients (from olive oil to seasoning) and the grated carrot in a bowl and mix well. Add all the remaining ingredients and mix well before serving.
