Sauteed Cauliflower with Creamy Apricot Sauce

Ingredients

Cauliflower 1/3
Chicken soup as required
Ripe apricot 1
Mayonnaise 2 tbsp
Greek yogurt 2 tbsp
Mild curry powder or garam masala 1 tsp
Lemon juice 1 tsp
Salt & pepper as required

Method

Pull apart the cauliflower to florets and boil lightly in a coat of chicken soup seasoned with salt & pepper.

Remove the cauliflower florets and slice to 7mm thick.

Put the oil in a frying pan on a low heat and lightly saute the cauliflower slices.

Put the mayonnaise, yogurt, curry powder and lemon juice in a small bowl and mix well.

Add the peeled and finely chopped apricot to Step 4.

Place the cauliflower slices onto a dish and pour over the sauce just before serving.

Tips & Note

●If your apricot is not that sweet, avoid putting lemon juice in Step 4.
