[Video] Cavolo Nero Italian Soup

Cavolo nero is from the cabbage family. The leaves are very dark and black and is also called Italian black cabbage. Soup made from this is delicious!

Ingredients

Cavolo nero 200g
Onion (medium) 1
Cannelloni beans tin 1 (400g)
Pancetta 100g
Olive oil 1 tbsp
Garlic 1 clove
Salt 1 tsp
Sugar 1/2 tsp
Black pepper a litte
Hot water 1500ml

Method

Wash the cavolo nero thoroughly and remove the stalk. Roughly chop.

Roughly chop the onion and smash the garlic.

Heat up the oil in a deep pan on medium heat and fry the garlic. Then add the pancetta and onions and fry 2-3 minutes.

Add the cavolo nero and the hot water. Add the drained cannelloni beans.

Remove any scum as it comes to the boil. Season with the salt, sugar and black pepper.

Turn the heat down to low and put the lid on. Simmer for 30 minutes and season again with salt before serving. It can be eaten immediately or reheated the next day.

Tips & Note

This soup has not stock cubes or herbs, but its flavour comes from the pancetta and the cavolo nero. The secret ingredient is the sugar. Please take a look at my video to see how to remove the cavolo nero stalk.
