Salmon, Celeriac and Orange Starter

Ingredients

Celeriac 1/2
Oranges 2
Vegetable stock (Kallo cube) 1
Salt 1/2 tsp
Water 400ml
Smoked salmon 100g
Dill as required
Rocket as required
Black pepper as required

Method

Peel the orange and remove the pith. Slice into 8, 3mm thick rounds.

Squeeze any remaining orange juice into a pan.

Peel the celeriac and slice into 8, 3mm thick slices. Drizzle with lemon juice to stop any discolouration.

Add water, stock cubes, and salt to Step 2 with the slices of celeriac and put on to heat.

Cook for 15 minutes then turn off the heat and leave for 10 minutes.

Drain the liquid from Step 5. Put the celeriac onto a dish and cover with the smoked salmon and orange slices.

Arrange nicely with the rocket and sprinkle over with the dill. Season with black pepper if you like, it's now ready to serve.

Celeriac is from the same family as celery, it's actually the root.

Tips & Note

●The celeriac will quickly brown, so soak into 500ml water with 1 tsp vinegar or lemon juice to prevent this.
