Broccoli Stalk Salad

Don't waste any part of the broccoli! In fact, it's actually delicious in itself!

Ingredients

Broccoli stalks 2
Salt a little
Sushi vinegar 2 tbsp
Sesame oil 1 tbsp
Ginger 20g
Chilli powder as required

Method

Remove and discard the outter hard part of the broccoli stalk. Thinly slice the softer parts and put in a bowl. Cut the ginger into fine strips.

Add the salt and leave for 5 minutes, this will draw out any moisture.

Pat dry, then mix with the sushi vinegar and ginger.

Heat the sesame oil in a small pan and pour over Step 3 and mix well. It's now ready. Sprinkle with some chilli powder before serving, if you like.
