Sauteed Mackerel with a Fresh Mediterranean Dressed Salad

A lovely Mediterranean fish dish that's utterly fresh and tasty.

Ingredients

Mackerel fillets 2
Garlic 1 clove
Thyme 1/2 tsp
White wine 1 tbsp
Salt & pepper a little
Flour as required
Olive oil 1 tsp
Thyme for garnish (optional) as required
Dressing:
Gherkins (chopped) 1 tbsp
Capers (chopped) 1 tbsp
Flat parsley (chopped) 1 tbsp
Olives (chopped) 2 tbsp
Tomato 1
Lemon juice 1 tbsp
Salt 1/2 tsp
Pepper a little
Extra virgin olive oil 1 tbsp

Method

Finely chop the gherkins, capers, parsley and olives.

Peel the tomato (boil then plunge into cold water) , deseed and chop into 1cm dice.

Marinate the mackerel in finely sliced garlic, thyme, white wine and salt & pepper for 30 minutes. Pat dry and lightly dredge with flour.

Put some oil in a frying pan on medium heat and fry the mackerel for 5 minutes on each side.

Mix together all the dressing ingredients and arrange nicely on a serving dish. Place the mackerel on top and garnish with the thyme.

Tips & Note

●Score the mackerel skin first before marinating to stop the fish curling up
●You can add garlic or finely chopped onions into the dressing ingredients
●If you garnish with wild rocket, for example, this will really feel like a Mediterranean dish!
