Potato & Spring Onion Pancakes

Lighter than just spring onion pancakes.

Ingredients

New potatoes 300g
Peeled prawns 100g
Eggs 2
Spring onions 2
Flour 2 tbsp
Salt 1/3 tsp
Water 2 tbsp
Soy sauce 4 tsp
Green laver as required
Sesame seeds as required
Vegetable oil 2 tbsp

Method

Wash the potatoes and roughly chop the spring onions.

Put the egg, flour, salt, water and spring onions into a large bowl and mix well.

Grate the uncooked potatoes (with skin) into the bowl.

Mix well with a fork until it becomes light, fluffy and full of bubbles.

Add the prawns into the bowl.

Put the oil in a frying pan and put on medium high heat. Pour in half the batter.

Use a spatula or fish slice to neaten the edges and put the lid on. Steam fry for 3-4 minutes.

Turn it over and cook for a further 3-4 minutes. Pour the soy sauce around the edge.

Repeat with the remaining batter. Place on a dish and sprinkle with the green laver, it's ready to serve.

Tips & Note

●Pour the soy sauce gradually around the edge of the pan to create a nice flavour.
●Of course, you can use your favourite sauce instead of soy sauce.
