Savoury Egg & Tomato on Rice

Ingredients

Cooked rice for 1
Tomatoes 3
Egg 1
Sesame oil 1/2 tbsp
Mayonnaise 1 tbsp
Chinese soup stock granules 1/2 tsp
Salted kombu as required
Spring onions as required
Crushed sesame seeds as required

Method

Roughly chop the tomatoes.

Put the sesame oil in a frying pan on medium heat. Add the beaten egg and make a scrambled egg. Remove to a plate.

Add the mayonnaise to the frying pan and add the chopped tomatoes when it's loosened.

Add the stock granules and return the scrambled egg to the pan and fry together.

Put the cooked rice in a bowl and top with the egg and tomato. Sprinkle the salted kombu, finely chopped spring onions and crushed sesame seeds before serving.
