Speedy 3 Colour Donburi

Very nutritious and filling, this is a very satisfying dish.

Ingredients

Minced beef 250g
Soy sauce 2 tbsp
Sake 2 tbsp
Mirin 2 tbsp
Sugar 2 tbsp
Eggs 4
Soy sauce 1 tsp
Mirin 1/2 tbsp
Sugar 2 tbsp
Cucumber 1/3 tbsp
Salt 1/3 tsp

Method

Here are the ingredients.

Put the oil in a frying pan and fry the minced beef until separated and nicely browned.

Add the soy sauce, sake, mirin and sugar and simmer to reduce.

Mix the eggs in a bowl with the soy sauce, mirin and sugar.

Put the vegetable oil in a different frying pan and pour in the egg mixture from Step 4.

Turn the heat down to low and scramble with a fork.

Cut the cucumber into strips and add salt. Keep for 10 minutes then squeeze.

Put some cooked rice in a bowl, then top with the meat from Step 3, the egg from Step 6 and the cucumber from Step 7.

Tips & Note

The sweet and salty mince, the sweet scrambled egg makes a good combination. You could use green beans, edamame beans or sugar snap peas instead of cucumber if you prefer. To garnish, you could sprinkle with shredded nori and cherry tomatoes.
