Pork in Miso Sauce with Poached Egg

Ingredients

Pork loin fillets 2
★Miso (red) 3 tbsp
★Sake or white wine 1 tbsp
★Mirin 1 tbsp
★Soy sauce 1 tbsp
★Honey 1 tbsp
★Garlic paste 1 tsp
Water 50ml
Eggs 2

Method

Put all the ★ingredients in a bowl and mix well.

Spread this paste onto the pork and keep in the fridge overnight.

Fry the pork on medium heat in some oil in a frying pan. Put the lid on to avoid any splashes of oil.

Make poached eggs: crack one egg at a time in a small bowl and cover with water. Microwave for about 1 minute 40 seconds (depending on the wattage).

Top the cooked pork with a poached egg and pour over any remaining sauce as a gravy.

Tips & Note

The miso paste is likely to splash to better to put the meat in the frying pan first before turning the heat on. Cook slowly on both sides for 8-10 minutes.
