Stir Fried Komatsuna (Japanese Spinach) with a Honey Mustard Sauce

Ingredients

Pork loin fillet 150g
Soy sauce 1 tsp
Sake or white wine 1 tsp
Salt & pepper a little
Komatsuna Japanese spinach 100g
Chestnuts mushrooms 10
Wholegrain mustard 2 tbsp
Honey 1 tbsp
Soy sauce 1 tbsp
Vegetable oil 1 tsp
Fried tofu (abura-age) 1

Method

Cut the mushrooms into four, chop the fried tofu into bitesize pieces, thinly slice the pork and rub with the sake, soy sauce, salt & pepper.

Put the oil in a frying pan and fry the pork on high heat. Add the mushroom and fry.

Add the fried tofu and komatsuna spinach, season with the salt & pepper and fry for 2 minutes. Pour in all the sauce ingredients and fry for 1 minute.
