Homemade Clear Broth with Ramen Noodles (Shio Ramen)

I tried making a clear broth ramen noodle using ingredients only available in UK supermarkets. I think I did a pretty good job!

Ingredients

Dried ramen noodles for 2 people
Fish stock cube 1
Chicken stock cube 1/2
Vegetable stock cube 1/2
Oyster sauce 1 tsp
Ginger 1 thumb
Beansprouts 2 handfuls
Garlic 1 clove
Pepper a little
Spring onion 1
Carrot 1/8
Mangetout 8
Ham slices 4
Boild egg 1
Sweetcorn 4 tbsp
Butter 2 tbsp
Hot water 900ml

Method

Cut the carrot into fine needles and grate the garlic and ginger. Finely chop the spring onion.

Add the 3 kinds of stock cubes into the hot water in a pan and add the butter, oyster sauce, pepper, garlic and ginger.

Add the beansprouts, mangetout, carrots, ham and spring onions and cook for 2 minutes on medium heat.

Cook your favorite dried noodles at the same time in another pan.

When the noodles are cooked, drain them and transfer to a ramen bowl.

Place the vegetables from Step 3 on top, then garnish with the boiled egg, sweetcorn, etc. Finally, pour over the soup and enjoy!

Tips & Note

● I used Knorr stock cubes this time, they were pretty tasty. Of course, you can try using other brands and let me know how they turned out
● Use your favourite toppings
