Ingredients

Chicken wings 10
Soy sauce 1 tbsp
Sake 1 tbsp
Mirin 1 tbsp
Sugar 1/2 tbsp
Sesame oil 1 tbsp
Sesame seeds as required

Method

1
Here are the ingredients.
2
Clean the chicken wings and pat dry. Pierce the skins with a fork, turn over and score the underside. Season with salt & pepper.
3
Put the sesame oil in a frying pan and fry the chicken, skin side down, on medium heat.
4
When it's browned, turn over and put the lid on to steam fry. When the chicken is cooked, dab away excess oil with kitchen paper.
5
Mix all the ingredients from soy sauce to sugar in a jug and pour into the frying pan. Turn the heat down to low and turn the chicken over regularly to coat thoroughly. It's now ready.
6
Sprinkle with sesame seeds if you like.
7
If you use chicken thighs, it will be suitable for a lunchbox or picnic.

Tips & Note

Washing the chicken first will reduce any odour, so the end result will be tastier. Once the sauce is added, keep turning the chicken and sauce on low heat to avoid it burning.
