Smoked salmon | 100g |
Onions (medium) | 2-3 (500g) |
Carrots (medium) | 1-2 (300g) |
Cucumber (medium) | 1 |
Rice vinegar | 1/2 cup |
Water | 1/2 cup |
Dashi granules | 1 tsp |
Light soy sauce | 1-1/2 tsp |
Sugar | 1/2 tsp |
Olive oil | 2 tbsp |
Lemon juice | a little |
Thinly slicing and soaking the onions will reduce the acrid flavour and make it more pleasant to eat. Add a bit more sugar if you don't like it too sour. If you don't have time, put everything into a ziploc bag and rub together, it will marinate a bit quicker. You could use squid or octopus with the smoked salmon if you like. Adding some red peppers or cherry tomatoes as a garnish will make this a colourful dish.
