Pickled Salad Vegetables with Salmon

Ingredients

Smoked salmon 100g
Onions (medium) 2-3 (500g)
Carrots (medium) 1-2 (300g)
Cucumber (medium) 1
Rice vinegar 1/2 cup
Water 1/2 cup
Dashi granules 1 tsp
Light soy sauce 1-1/2 tsp
Sugar 1/2 tsp
Olive oil 2 tbsp
Lemon juice a little

Method

Here are the ingredients.

Finely slice the onion and soak in water. Cut the carrot and cucumber into fine strips. Add some salt to the cucumber if it has too much moisture and squeeze.

Make the marinade by combining all the ingredients from the rice vinegar to the lemon juice in a container. Add the carrot and drained onions and put into a microwave for 90 seconds.

Allow to cool then add the cucumber and flaked salmon. Keep in the fridge for at least an hour before serving.

Tips & Note

Thinly slicing and soaking the onions will reduce the acrid flavour and make it more pleasant to eat. Add a bit more sugar if you don't like it too sour. If you don't have time, put everything into a ziploc bag and rub together, it will marinate a bit quicker. You could use squid or octopus with the smoked salmon if you like. Adding some red peppers or cherry tomatoes as a garnish will make this a colourful dish.
