New Year Japanese Sweet Chestnuts

A lovely melt in the mouth traditional Japanese sweet for New Year. But I've had so many friends ask me to make this throughout the year.

Ingredients

Sweet potato 1 (400g)
Sweet chestnut syrup (kanro-ni) 180g

Method

Here are the ingredients.

Wash and thickly peel the sweet potatoes and cut to 1cm slices. Put in a pan, add water to cover and cook on medium heat until softened.

Mash to a smooth puree.

Use a spatula to get it really smooth.

Sieve while hot to make it silky.

Add the sweet chestnut syrup and mix well.

Tips & Note

Once the sweet potato is peeled, it goes down to 300g. Once sieved and mixed with the syrup, it becomes really smooth and silky.
