Light and Fluffy Sweet Potato Cakes

Ingredients

Sweet potatoes (medium) 2 (400g)
Butter 20g
Sugar 40g
Milk 20g
Egg yolk 1

Method

Peel thickly, wash and slice the sweet potato to 1cm slices. Soak in water for 3 minutes.

Put in a bowl, cover with cling film and microwave for 6-7 minutes until soft.

Mash well until smooth.

Whilst hot, add the butter and sugar and mix thoroughly. Add the milk a bit at a time to make it firm enough to shape into balls.

Drop into muffin cases and brush with the egg yolk.

Put in a preheated oven (200C) for 5 minutes until lightly browned then brush with more egg yolk and bake for a further 5 minutes.

Tips & Note

Sweet potatoes vary in water content so add enough milk accordingly. You can make round or oval shapes, as you like.
