Serves 1 Prep: 30 min Cook: 20 min

Ingredients

Pork loin fillet 1
Chicken thigh 1
Salt & pepper as required
Flour 3 tbsp
Eggs 2
Breadcrumbs 5-6 tbsp
Spray oil as required
Red & green pepper 1/3 each

Method

1
This time, I used these meats. Remove the bone and skin from the chicken thigh. Season well with salt & pepper.
2
Chop all the meat into thin bitesize slices. Preheat the oven 180C and have ready an oven tray.
3
Here are the ingredients. Beat the eggs and use the oil spray on the breadcrumbs 2-3 times.
4
Dredge all the ingredients in flour and remove any excess. Run through the beaten egg and cover liberally with the breadcrumbs.
5
Spray oil the oven tray before placing all the breadcrumbed ingredients onto it.
6
Spray oil over the top twice then place in the oven.
7
Bake for 20 minutes.
8
Place on a serving dish and enjoy with tonkatsu sauce, or tartare sauce or any other preferred sauce.

Tips & Note

●You only use a little oil in this recipe, so it should suit everyone.
●It takes slightly longer than deep-frying, but you don't need to worry about the leftover oil or the washing up!
