Ingredients

Chicken thighs 6
Salt & pepper a little
Sake 2 tbsp
Potato starch as required
Vegetable oil (for frying) as required
Worcester sauce 6 tbsp
Onion marmalade (or chutney) 2 tbsp
Oyster sauce 1 tbsp
Mirin 3 tbsp
Sake 3 tbsp
Light soy sauce 2 tbsp
Water 2 tbsp

Method

Here are the ingredients.

Remove the bones from the chicken thighs but keep the skin on. Chop each into 4-5 pieces. Season with salt & pepper and sake.

Put the sauce ingredients into a small pan and bring to the boil.

Dredge the chicken with potato starch and remove any excess.

Put the oil in a deep pan for frying and heat to 170-180C. Deep fry the chicken pieces.

When they're cooked, drop into the sauce and serve immediately. This is delicious in a bento lunchbox.

Tips & Note

Deep fry the chicken until the skin becomes crispy. Dip into the sauce while it's hot so that it absorbs the sauce.
