Cheesecake with Summer Fruits

Present in a cool glass dessert dish to make it really appealing.

Serves 3

Ingredients

Cream cheese tub 1/2 (125g)
Caster sugar 40g
Lemon juice 1/2 tbsp
Plain yogurt 50g
Gelatine sheets 2 (3g)
Milk 2 tbsp
Creme de Cassis 1/2 tsp
Summer fruits 100g
Garnish:
Chocolate digestive biscuits 2 (30g)
Creme de Cassis 1 tsp
Lemon juice 1 tsp
Summer fruits as required
Jam 2 tbsp
Mint leaves 3

Method

Put the cream cheese, sugar, lemon juice and yogurt in a bowl and mix well.

Soak the gelatine in cold water for 5 minutes to soften.

Squeeze out the gelatine. Heat the milk in a microwave to 70C then add to the gelatine in the bowl and allow to dissolve.

Pour Step 3 into the bowl at Step 1 and mix well. Add the Creme de Cassis and mix.

Add the chopped summer fruits and mix well. Divide into dessert glasses and keep in the fridge for 1 hour to firm up.

Put the biscuits into a ziploc bag and smash with a rolling pin to make fine crumbs.

Add the Creme de Cassis and lemon juice into the jam to loosen it then pour over the cheesecake.

Garnish with the crushed biscuits, more fruit and mint leaves before serving.

Tips & Note

●The biscuits for garnish can be Oreo or any of your favourites. I recommend using red colour jams such as strawberry, raspberry or plum.
