Deep Fried Skate

This has lovely crunchy soft bones.

Ingredients

Skate wings 2
Salt & pepper as required
Potato starch 3 tbsp
Vegetable oil as required
[Sauce]
Rice vinegar 3 tbsp
Soy sauce 1 tbsp
Sugar 1 tbsp

Method

Pat dry the excess moisture from the skate, season with salt & pepper and dredge with potato starch. Mix together the sauce ingredients.

Put the vegetable oil in a pan and heat on medium. Deep fry the skate one at a time.

Fry for 3 minutes each side until crispy.

While it's still hot, pour over the sauce and serve.

Tips & Note

Frying for 3 minutes on each side should make the skate lovely and crispy.
