Creamy Avocado Gratin

Ingredients

Avocados 4
Bacon or ham 100g
Mayonnaise 4 tbsp
Pepper a little
Garlic powder a little
Grated cheese (or sliced) 120g (4)
Parsley a little

Method

Wash the avocados and cut in half. Remove the stone and scoop out the flesh into a bowl.

Chop the avocado and bacon or ham to 1/2-1cm dice and mix with the mayonnaise, pepper and garlic powder.

Carefully fill the avocado skins with the mixture.

Put the cheese on top then cook in an oven grill for 5-10 minutes until the bacon is cooked and the cheese is golden. Garnish with fresh chopped parsley.

Tips & Note

Because the avocado skin acts as a dish, scoop the flesh out cleanly at Step 2. If the avocado is very ripe, you can mash the flesh instead of dicing it.
