Soba Noodle Salad with Sesame Dressing

Tahini added to noodle stock makes a delicious sesame dressing!

Ingredients

Soba noodles 100g
Tahini 2 tbsp
Sesame dressing:
Noodle stock (concentrated) 2 tbsp
Water 3 tbsp
Crushed sesame seeds 2 tsp
Mayonnaise 2 tbsp
Sesame seeds as required
Vegetable oil as you like

Method

Boil the soba noodles. In the meantime, mix all the sesame dressing ingredients together in a bowl.

For the toppings, I used avocado, asparagus, cherry tomatoes, lettuce and surimi - these were the things I grabbed from the fridge. Use anything you like but the colour combination is important.

When the soba noodles are ready, wash them under cold running water and drain well. Transfer to a serving bowl and add your toppings. Pour over lots of the sesame dressing.

This is the tahini I used. It works well and lasts for a long time, it's very handy to use.
