Fresh and Tasty Smoked Mackerel with Pickles

Ingredients

Smoked mackerel fillets 2
Cucumber 10cm
Dried wakame seaweed 1 tbsp
Dried chilli sliced into 10
Ginger as required
▼Rice vinegar 2 tbsp
▼Sugar 1 tbsp
▼Concentrated noodle broth (mentsuyu) 1 tsp
▼Dashi granules (hondashi) 1 tsp
▼Sesame oil 1 tsp
Sesame seeds as required

Method

Choose 2 medium sized boneless smoked mackerel fillets and cut to bitesize pieces.

Thinly slice the cucmber and squeeze out all the liquid.

Put all the ▼ingredients into a bowl and mix to dissolve the sugar. Add the dried wakame, cucumber and mackerel.

Cover with cling film and leave in the fridge for one hour. Transfer to a small serving bowl and sprinkle with sesame seeds before serving.

Tips & Note

Mackerel is quite delicate, so avoid stirring it when you add it to the pickle.
