New Year Japanese Sweet (Kuri Kinton)

Ingredients

Sweet potato 750g
Gardenia fruit 1
Sweet chestnuts as required
Flavourings:
Granulated sugar 250-300g
Mirin 2 tbsp
Sea salt a pinch

Method

Peel the sweet potato thickly.

Cut into 3cm pieces then soak in water for a while.

Add the sweet potatoes into a pan with enough water to cover. Add the gardenia fruit and turn the heat on. Bring to the boil then turn down to a simmer for 20 minutes.

Drain Step 3 then blend with the flavourings.

Add the sweet chestnuts and blend.

Tips & Note

●You can mash and mix together if you don't have a blender.
