Smoked Kippers & Fennel Simmered in Wine

Ingredients

Smoked kippers 1 pack
Fennel 1
Garlic 1 clove
Sea salt 1/2 tsp
Black pepper as required
White wine 3-4 tbsp

Method

Wrap the kippers in kitchen paper and microwave (600W) for 2 minutes. Remove the bones and cut into strips.

Put the finely chopped garlic into a pan and add half of the fennel cut into 3mm slices. Lay the kipper strips on top of the fennel.

Cover the kippers with the remaining fennel slices, season with salt & pepper and pour over the white wine.

Put the lid on and heat on medium until it boils, then simmer on low heat for 20 minutes. It's ready when the fennel is nice and soft.
