Ingredients

Sushi rice for 1 person
Spring onions 2
Parma ham slices 6
Mozzarella cheese as required
Cherry tomatoes as required
Basil leaves as required
Extra virgin olive oil as required
Black pepper as required

Method

Make sushi rice by adding sushi vinegar to hot cooked rice. Adding chopped spring onions at this time will make it more delicious.

Lay a large piece of cling film on an oven tray (12×18×1cm).

Lay out the parma ham slices evenly. There will be plenty of ham to make satisfying sushi when it's cut.

Wrap over with the cling film and press down.

Turn upside down and remove tray, but keep the cling film on.

Make indentations with a palette knife to cut into 12 even pieces. This will also give a pleasing curve.

Cut into 12 pieces and and transfer to a serving dish. Garnish with the mozzarella, tomato and basil leaves.

Finally, drizzle over the olive oil and flavour as much as you want with the black pepper. It's done!
