Ingredients

Tahini 3 tbsp
Soy sauce 1 tbsp
Sugar 1 tbsp
Vinegar 1 tbsp
Chinese chilli bean sauce (Tobanjan) 2 tsp
Sesame oil 1 tsp
Chicken stock cube (in 5 tbsp water) 1/4
Egg noodles for 2 people
Toppings: as you like
Prawn, crab sticks, salad leaves, tomatoes as you like
Smoked salmon, sweetcorn as you like
Boiled eggs as you like
Pine nuts (or crushed peanuts) as you like

Method

Put all the sauce ingredients in a bowl and stir well.

Boil the noodles, cool well under cold running water and drain thoroughly.

Choose your favorite toppings and cut to bitesize. Seafood is good, chicken and pork also work well with tahini. Arrange around the noodles in a serving bowl.

Pour over the sauce from Step 1 and sprinkle some pine nuts or crushed peanuts to garnish. Enjoy!
