Creamy Brown Crabmeat & Tomato Spaghetti

Ingredients

Brown crabmeat 100-150g
Tinned tomatoes (chopped) 1 (220g)
Single cream 100ml
Sugar 1/2 tbsp
Salt 1 tsp
Spaghetti for 2 people
Garlic 1 clove
Oil 1/2 tbsp

Method

Make the sauce first: put the oil in a frying pan and fry the finely chopped garlic on medium heat. Add the tinned tomatoes and sugar and simmer. Now make the spaghetti.

Simmer the sauce for 5 minutes and add the single cream. Turn the heat down to low and add the crabmeat.

Keep simmering on low heat until the spaghetti is ready.

Season the sauce with salt & pepper then mix with the spaghetti or serve on top.

Tips & Note

The tomatoes, if simmered for a long time, will lose their sourness and become richer and deeper. If you don't have time, you can just add sugar to reduce the sourness. While it's simmering, crush the tomatoes thoroughly with a fork otherwise the lumps of tomato will keep the dish tasting rather sour.
