Mussel Chowder

Use a fresh fish stock if you can.

Ingredients

Mussels 250g
Bacon or pancetta 50g
Fish stock 200ml
Milk 200ml
Flour 1 tbsp
Potato 1
Carrot (small) 1

Method

Cut the potato into small dice and microwave to soften.

Put the finely chopped bacon into a pan and fry. Add the washed and cleaned mussels and fry.

When the mussels open, add the cooked potato from Step 1. Add the finely sliced carrot and fry further.

Add the milk mixed with the flour and the fish stock and simmer until the carrots soften.
