Quick Anchovy Fried Rice

The ethnic flavour is enhanced with the fish sauce.

Ingredients

Cooked rice for 2 people
Anchovy fillets 4
Eggs 2
Fish sauce (nam pla) 1 tsp
Sesame oil 2 tsp
Salt & pepper as required

Method

Put some vegetable oil in a frying pan and make rough scrambled eggs.

Lightly cook the anchovy in a separate frying pan (no oil) for 30 seconds.

Add the cooked rice onto Step 2 and cook until med together, then add the fish sauce. Season with salt & pepper.

Then add the scrambled eggs from Step 1 and sesame oil. Stir fry a little while. It's ready to serve.

For Thai or Vietnamese cooking, you can't miss out fish sauce. This is the one I use, 725ml for £1.50.

Tips & Note

You can use the same frying pan for Steps 1 and 2 if the egg have been fully removed. Be careful when stirring the anchovy, as it might crackle in its own heated oil.
