Oven Baked Yaki-Onigiri (Rice Balls)

Ingredients

Rice 2 gou (300g)
Tuna in sunflower oil (small tins) 2
Teriyaki sauce mackerel tin (from Tesco) 1
【Tuna mayonnaise topping】
Mayonnaise 1.5 tbsp
Soy sauce 1 tsp
Onion 1/4
Chinese chilli bean sauce 0.5 tsp
Cayenne pepper as you like
【Hot & spicy miso mayonnaise topping】
Miso (red) 1 tsp
Leek as required
Mayonnaise 1.5 tbsp

Method

Cook the rice. There are 3 different simple toppings this time.

The first is using Tesco's mackerel in teriyaki sauce. Mix with finely sliced strips of leek.

The second one is tuna. Thinly slice the onion and soak in hot water for a minute. Drain and finely chop. Mix with the tuna and mayonnaise.

The third one is also tuna. Mix with miso, Chinese chilli bean sauce and mayonnaise.

Divide the cooked rice into ping pong ball size pieces and flatten on the palm of your hand to make rice pads.

Preheat the oven 180C.

Dip a kitchen towel into the oil and rub over some foil. Scrunch up the foil and open out so it's still uneven.

Place the rice pads onto the foil.

Start covering the flat rice pads with the toppings.

Bake in the oven for 15 minutes.
