One Pot Mackerel with Rice

Use Tesco's tinned mackerel - it's so easy, quick and cheap!

Ingredients

Rice 3 gou (450g)
Tinned mackerel (in brine) 2
Sauce:
Soy sauce 4 tsp
Sake 3 tbsp
Dashi stock granules 2 tsp
Mirin 1 tbsp
Sesame seeds (optional) a little

Method

This is the tinned mackerel I used, from Tesco. There are lots of different sauces, but use the ones in brine.

Drain the brine from the tins into a bowl.

Add soy sauce, sake, dashi granules and mirin and mix well.

Wash the rice and drain it well. Put into a rice cooker and add the sauce from Step 3.

Add the appropriate amount of water (take care to include the sauce amount).

Add the mackerel and keep aside for a short while then cook.

Once cooked, mix the mackerel into the rice.

Transfer to a serving dish and sprinkle with sesame seeds or chopped nori on top before serving.

Tips & Note

It's better not to use the tinned mackerel in oil or tomato, it works best with brine.
