Simmered Pork with Cabbage on Rice

The sweet sauce and crisp cabbage works well with the pork.

Ingredients

Pointed cabbage 1/4
Pork belly 200g
Brown sugar 2-3 tbsp
Light soy sauce 2-3 tbsp
Water 1-2 tbsp
Garlic 2 cloves
Ginger 1 thumb
Pickled ginger (gari) a little
Red chilli 1
Cooked rice for 2 people

Method

Shred the cabbage and mix with fine strips of the pickled ginger.

Put some oil in a heated frying pan and fry the finely chopped garlic and ginger. Add the whole red chilli and fry.

Add the pork belly cut into 1.5-2cm slices and fry.

When the pork is cooked, add the brown sugar and turn the heat down to low and cook further. Add a touch of water if required.

Put the cooked rice in a bowl and top with the cabbage from Step 1.

Turn the frying pan heat up to maximum and add the soy sauce. After 1 minute, top the rice and cabbage with the pork and serve.
