Avocado & Salmon Donburi Rice Bowl

Ingredients

Salmon fillet 2
Avocado 1
【Sauce】
Spring onions 3
Red pepper 1/4
Sake 2 tbsp
Mirin 1.5 tbsp
Light soy sauce 1 tbsp
Wasabi 1-2 tsp
Lemon 1/2
Cooked rice as required

Method

Season the salmon with some salt & pepper and dredge with some flour.

Slice the avocado into 1cm wedges, roughly chop the spring onions, and dice the red pepper into 5mm square.

Put some vegetable oil in a frying pan and pan-fry the salmon fillets on a low heat.

Add the avocado and fry until nicely browned.

In a separate pan, stir the spring onions and red pepper in some oil.

Add the sake, mirin and soy sauce and turn the heat off when it comes to a boil. Add the wasabi and mix together.

Put the cooked rice into a bowl and place Step 4 over it. Pour over the sauce from Step 6 while it's still hot. Squeeze some lemon over it just before serving.

Tips & Note

●Never overcook the salmon or avocado, cook on a low heat and watch all the time.
