Put the rainbow trout head to the right and the belly nearer you.

背ビレとあぶらビレの間から1センチ下がった所にプスリと穴を開ける(②の穴)。

尾ビレの手前2センチの所にも穴を開ける(③の穴)。

口から金串を通し、①の穴にむかって串を進める(串は皮の外には出さない)。

②の穴に向かって串を刺し進める。その状態で串を垂直に立て、ニジマスがL字になるようにする。

串が裏側の皮まで達している(皮は突き破らないこと)のを確認し、その状態をキープしたまま裏返す。
7
尾を手前に持ち上げて串を③の穴に向かって刺す。最後は、皮を突き破るようにする。
