Flat fish swim on the ocean bed with its white side facing down, so the white side is always flat.

The darker side, on the other hand, is nice and plump.
So when you buy a fillet of any flat fish .........

Buy a fillet of the darker side - it's thick and delicious. At the supermarket, you can buy both the white and darker side. It's worth comparing the taste and enjoyment of each.

Tips & Note

As a fishmonger, I often hear customers ask for a 'white fillet' - probably because the darker fillet doesn't look that attractive. When someone does ask for a darker fillet, I instantly think they used to be a fisherman!
