Baked Seabass in Breadcrumbs

Ingredients

Seabass fillets 2
Herby Breadcrumbs:
Breadcrumbs 6 tbsp
Olive Oil 2 tbsp
Parmigiano Reggiano (grated) 2 tbsp
Fresh or dried parsley (or your favourite herbs) as required
Salt & pepper as required

Method

Put all the breadcrumbs ingredients in a bowl and mix together. Preheat the oven 180C.

Place a baking sheet on an oven tray and brush with oil and lay the seabass on it, skin-side down.

Cover liberally with the breadcrumbs mix.

Bake for 10 minutes. When the breadcrumbs are nice and toasted, the seabass should also be cooked.

Remove the seabass carefully so as not to break it, and arrange on a serving dish.
