Shredded Brussels Sprouts & Prawn Coleslaw

Ingredients

Brussels sprouts 300g
Carrot 1
Onion 1
Prawns (cooked) 50g
Dressing:
Mayonnaise 3 tbsp
Rice vinegar (or white wine vinegar) 1 tbsp
Dried shiso herbs (yukari) a little

Method

Wash and cut the sprouts into 5-6 slices each.

Cut the onion and carrot into fine strips. Sprinkle with salt and keep aside. When the vegetables are slightly softened, squeeze out the moisture.

Add the cooked prawns to Steps 1 & 2. Mix the dressing ingredients together in a small bowl and add to Step 2.

score a couple of times on each base before cooking - this will help to absorb flavours and cook quickly.

Tips & Note

●Adjust to taste with salt as it will depend on the mayonnaise you use.
